Here’s a simple and delicious recipe for homemade vegetable lasagna:

Ingredients:

  • 9 lasagna noodles (oven-ready or boiled according to package instructions)
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1 egg (lightly beaten)
  • 2 cups ricotta cheese
  • 1 medium zucchini, thinly sliced
  • 1 medium yellow squash, thinly sliced
  • 1 cup sliced mushrooms
  • 1 bell pepper, diced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 1 can (14 oz) diced tomatoes, drained
  • 2 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh basil or parsley for garnish (optional)

Instructions:

  1. Preheat the oven: Preheat your oven to 375°F (190°C).
  2. Prepare the vegetables: In a large skillet, heat the olive oil over medium heat. Add the onion, garlic, bell pepper, zucchini, yellow squash, and mushrooms. Cook until the vegetables are softened, about 8-10 minutes. Season with salt, pepper, oregano, and basil. Stir in the crushed tomatoes, diced tomatoes, and tomato paste. Simmer for another 10 minutes, allowing the flavors to meld. Adjust seasoning to taste.
  3. Prepare the cheese mixture: In a bowl, combine the ricotta cheese, beaten egg, and half of the Parmesan cheese. Mix well.
  4. Assemble the lasagna:
    • Spread a thin layer of the vegetable-tomato sauce in the bottom of a 9×13-inch baking dish.
    • Place 3 lasagna noodles on top.
    • Spread half of the ricotta mixture over the noodles.
    • Add half of the vegetable-tomato sauce on top.
    • Sprinkle half of the mozzarella cheese over the sauce.
    • Repeat the layers, finishing with a layer of mozzarella and the remaining Parmesan cheese on top.
  5. Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 10-15 minutes or until the cheese is bubbly and golden.
  6. Serve: Allow the lasagna to rest for about 10 minutes before slicing. Garnish with fresh basil or parsley if desired.
