This is a starter set to impress (with presentation and taste) and it is super easy to make. Some know this starter as Prawn cocktail… basically the same thing. Another benefit is that this can be made slightly in advance so you don’t have to hassle when your friends are over.

What you need?
This recipe makes enough for two adult starter portions. Naturally double, triple and go wild if you making this for friends or stick to this recipe for a Romantic night in for two.
- 2 heaped tablespoons mayonnaise (about 35g)
- 20 ml tomato sauce (ketchup)
- 1/2 teaspoon of brandy
- 1 or 2 drops of Tabasco (or hot sauce of your choice)
- 1/3 teaspoon of lemon juice
- Small sprinkle of cayenne pepper
- 150g of medium sized prawns (out of the shell, deveined and fully thawed)
- 1 tablespoon of butter
- 1 garlic clove, crushed
- 1/2 teaspoon of cayenne pepper
- 1 avocado
- Lettuce for garnish
- Fresh chopped parsley for garnish
What to do?
- In a medium bowl, mix together the sauce ingredients (mayonnaise, tomato sauce, brandy, lemon juice and Tabasco). Set aside.
- Create the avocado rose (this is optional as you can also serve the prawns with the sauce in the pip hole of half of the avo, once peeled).

- Cut the avo in half length ways. Take the first half, and peel off the skin using a dessert spoon. Place the peeled half face down. Using a sharp pairing knife, slice the avo horizontally. Make sure you make very thin slices, if they too thick they can’t be maneuvered into a circle at the end (and will break). After slicing, move the slices into a long snake, separating these from each other. Once in a long snake, start rotating the one side into itself to create a circle, continue this until the entire snake is rolled up (and ta-da, the rose is done). Top onto a bed of lettuce. If you plan to make this slightly earlier, sprinkle some lemon juice on your avo once cut to prevent it from going brown/black.
- In a small frying pan on medium heat, add the butter. Once melted, add the prawns, cayenne pepper and garlic. Cook until the prawns turn pink and have some color. See color of prawns in first picture below.
- Once the prawns are cooked, add this to the sauce dish made earlier. Mix well to combine. See first picture below.
- Top the avocado with the prawns mixed in sauce.
- Top with freshly chopped parsley and serve, see second and third pictures below.
